How to stop Preview from opening files in the iOS 26 Files app

I was on the verge of deleting the new Preview.app from all of my iOS devices until I learned how to stop it from rudely opening every file I wanted to look at.

The secret is to press and hold on a file, then choose Open With. If you scroll to the very bottom (and the list might be long if you have numerous apps like me) you'll find a command for viewing the file using Quick Look. (Confusingly labeled using the word preview! Oh, Apple.)

Selecting this will, surprisingly, set Quick Look as the default for all files of the same type.

There are a couple of mistakes that Apple has made here. First, is changing a long-standing Files.app behavior by forcing Preview down our throats. The second is putting a setting in a list of commands. It belongs in Get Info, where it has been for decades on macOS, and logically belongs.

But nonetheless, if you've been pulling your hair out like I have, this is your answer.
